Preparation

  1. Preheat the oven to approximately 350°F.
  2. Brown the chicken breasts on both sides in a hot pan with a little oil and butter to give them a nice color, and add the lemon slices at the same time.
  3. Season the chicken breasts with salt and freshly ground pepper.
  4. In a Pyrex dish or similar, mix the cherry tomatoes with the garlic, grilled lemon slices, and shallots.
  5. Drizzle with a little olive oil. Season with salt and freshly ground pepper.
  6. Place the chicken breasts in the Pyrex dish.
  7. Cover with aluminum foil.
  8. Bake for 16 to 20 minutes. You can check by cutting into it to make sure it's not pink inside, and that's it!

Note: You can add orzo to this and sauté it in butter and garlic....
